Chicken Soup

6 cups of broth
1 cup cooked chicken
1 cup uncooked rice
1 3/4 cup fresh chopped vegetables (such as potatoes, carrots, celery, or cabbage)
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon salt
1 Tablespoon dried parsley

1. Use leftover cooked chicken, or cook enough chicken to make 1 cup of chicken pieces.
2. Place the cooked chicken in a large saucepan.
3. Add the broth and uncooked rice. Cover the pan.
4. Bring the broth and rice to a boil.
5. Cover the pan, and turn the heat to low.
6. Stir and simmer for 15 minutes.
7. Add the chopped onions, chopped vegetables, and seasonings.
8. Simmer for 10 to 15 minutes until the vegetables are tender.

Macaroni Chick-Pea Soup

3 1/2 cups chicken broth
1 cup water
1 3/4 cup dry macaroni
1/2 teaspoon celery flakes or onion powder
1/2 teaspoon oregano
1 cup stewed tomatoes
1 cup green beans
1 can chick-peas (garbanzo beans)
1/4 teaspoon garlic powder

1. In a large saucepan, bring broth and water to a boil. Reduce heat to low. Add macaroni, celery flakes, and oregano. Simmer 4 minutes, stirring occasionally.
2. Add stewed tomatoes, green beans, chick-peas (drained), and garlic powder. Simmer 5 minutes, or until macaroni and beans are tender.

Slow Cooker Lentil Soup

6 cups water
1/4 cup chopped fresh parsley or 2 Tablespoons dried parsley (optional)
2 teaspoons beef bouillon or 2 cubes beef bouillon
1 1/2 cups dry lentils
2 medium sliced carrots
1 medium chopped onion
2 sliced celery stalks

1. Mix all ingredients together in slow cooker.
2. Cook on LOW for 8 to 10 hours or HIGH for 4 to 5 hours.

Vegetable Cheese Soup

2 cups water
3 cups chopped mixed vegetables, fresh or frozen
1/4 cup chopped onion
1 teaspoon salt
1/2 teaspoon curry powder (optional)
1 cup dry milk, nonfat
1 cup water
1 1/2 Tablespoons cornstarch
1/2 cup Swiss cheese - cut into small pieces

1. Bring 2 cups water to a boil. Add vegetables, onions, salt and curry powder. Cook, covered, until almost tender.
2. Mix dry milk, 1 cup water and cornstarch together. Add to partially cooked vegetables.
3. Cook over medium heat, stirring often, until thickened.
4. Add cheese and stir until melted. Add more water if too thick.

Potato Soup

1/2 cup chopped onion
1/2 cup chopped celery
6 diced potatoes
2 Tablespoons margarine
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup nonfat dry milk
3 cups water
2 Tablespoons flour

1. Peel and chop the onion.
2. Chop the celery.
3. Peel the potatoes, and cut them into small cubes.
4. Melt the margarine in a large saucepan on low heat.
5. Add the onion and celery. Cook for a few minutes.
6. Add the potatoes, salt, pepper and 1 1/2 cups water.
7. Cook for 15 minutes until the potatoes are tender.
8. In a small bowl, stir together the dry milk and flour.
9. Add 1 1/2 cups water slowly, stirring as you add it.
10. Add the milk mix to the potatoes.
11. Cook until the soup is heated and slightly thickened.
12. Adjust the seasonings.

Fun Easy Recipes For Kids: Candy

With the holidays right around the corner, candy making is a great idea for an activity your kids may enjoy! They can share it with friends or even give it as gifts. :) Here’s a few fun easy recipes for kids who want to try making some candy this holiday season.

Mix and Match:
Melt whatever kind of almond bark you want (butterscotch, white chocolate, chocolate) in your microwave. Dip pretzel rods, dried fruit, etc. in it. You can even stir in rice krispies, raisins, coconut, etc. Either lay it out on waxed paper or drop by spoonfuls on waxed paper to cool.

Easy Fudge:
8 oz. semi sweet chocolate
2/3 cup sweetened condensed milk
3/4 teaspoon vanilla
1/2 cup nuts, (optional)

Grease 8 X4 or 9 X 5 loaf pan. Microwave the chocolate and sweetened condensed milk in uncovered
bowl on high for about 1 minute and stir. If the chocolate has not completely melted then microwave at additional 10 - 15 second intervals until you are able to stir it smooth. Stir in vanilla, and nuts, (if adding). If you want “rocky road” fudge, you may also add mini marshmallows at this time. Spread in a pan and refrigerate until firm. Cut into squares.

Peanut Butterscotch Krispies:

12 oz. butterscotch morsels
3 cups Corn Flakes
1/4 cup peanut butter

Melt the butterscotch morsels and peanut butter together, stirring until smooth. Add the corn flakes and mix well. Drop by tablespoons onto waxed paper.

Coconut Fudge Balls Candy Recipe

2/3 cup evaporated milk
2 1/2 cup powdered sugar
12 ounce semi sweet chocolate bits
1 cup chopped nuts
7 ounce or more coconut

Mix chocolate bits and milk and microwave until melted (about 3 minutes). Stir in sugar, and nuts. Chill 1/2 hour. Roll into balls. Roll balls in the coconut.

Marble Fudge:

1 (12 oz.) package semi-sweet chocolate
1 (12 oz.) package butterscotch
1 cup peanut butter
1 (10 1/2 ounce) package mini marshmallows
1 cup salted nuts

Combine the chocolate, butterscotch and peanut butter in large glass bowl. Microwave on medium for five minutes. Stir until melted. Fold in the marshmallows and peanuts. Spread in a buttered 13 x 9 inch pan. Refrigerate for several hours or until set. Cut into squares.

Thanksgiving Turkey Leftovers

Are you looking for some fun easy recipes for kids to use up your leftover turkey from Thanksgiving? Here are some quick ideas and easy recipes to get you out of the kitchen fast.

1. Turkey Wraps: Start with a tortilla and add turkey and any other left over veggies and cheese you may have in the refrigerator.

2. Turkey Salad: Shred some of the turkey. Add in your favorite lettuce and other salad fixings such as carrots, cheese, celery, beans and broccoli. This is a good way to use up what you have.

3. Add turkey to ready made or homemade vegetable soup.

4. Moist Turkey Sandwiches: Soak one slice of bread in gravy and put it in the middle between some turkey slices. Add some cheese or whatever else you want. Sandwich it between two slices of bread or a roll.

Slow Cooked Turkey Sandwiches

6 cups of shredded turkey
3 cups of shredded cheese
1/2 cup of Miracle Whip
1 onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup

Mix everything together and cook in crock pot, such as Rival slow cookers for 4 hours. Stir twice during cooking. Do not have the top off very long. Add some hot water at the end of the mixture is really thick. Serve on your favorite rolls.

Turkey Soup:
2 cans cream chicken soup
2 c. of skim milk
2 cans of diced tomatoes
1 tsp. of dried basil
1 tsp. of chopped garlic
1/2 a package of egg noodles
2 c. of leftover turkey
Cook noodles and add ingredients.

2-step Inside-out Chicken Pot Pie:
About 2 cups turkey cut up
1 can cream of chicken or cream of mushroom soup
1 bag frozen veg. (broccoli, cauliflower & carrots)
Heat until hot and veggies are done.
Serve on biscuits.

Turkey Casserole:
Grease a 13×9x2 pan and put these ingredients in, in the order given:
Turkey
Dressing
Cheddar Cheese cubes (Just a sprinkling)
Gravy
Poke holes so gravy seeps down through.
Top with:
Mashed potatoes that have been beaten with a little more milk (to soften) and 1 tsp baking powder.
Place prepared potatoes on top of mixture in pan
Bake a 375 for 30-45 minutes until hot all the way through

Ranch Turkey Pasta:
2 1/2 cups of uncooked penne or medium tube pasta
6-8 tablespoons of butter or margarine
1 envelope dry ranch mix
1 cup of frozen peas and carrots, thawed
3 cups of cubed cooked turkey
Cook the pasta according to directions. Meanwhile in a large skillet, melt butter. Stir in the ranch mix until smooth; heat through. Add the peas & carrots and cook and stir for 2-3 minutes. Drain pasta and add to skillet. Stir in turkey & heat through.
