My family loves chicken. I’m a vegetarian, so I don’t eat poultry but they enjoy chicken prepared in a variety of ways.

Start with a one pound chicken breast and cut it into three thin cutlets. Cut each slice into bite size pieces. Beat a large egg (we use organic) into a bowl and coat all the pieces. Add a generous amount of bread crumbs to a gallon size plastic zipper bag. Toss the chicken in the bag and mix to coat. Make sure the chicken pieces are not clumping together.
Add a thin coat of oil (we use saffron) to a 10 inch skillet and heat on medium to high heat. When the oil is hot, empty the contents of the bag into the pan. Cook 8-10, turing them while cooking. Cook until the bread crumbs are golden brown and the chicken is thoroughly cooked.
My husband made noodles with alfredo sauce (from a packet) and topped it with the breaded chicken bites.
