Family Dinner: Bacon Mac & Cheese

We recently tried a recipe that my family loved!! It’s a little twist on a classic family favorite. Also, because this blog is about easy meals – this one is quick and simple to make. I spoke about the Progresso Recipe Starters that we tried in the past and this uses the Creamy Three Cheese sauce.

Bacon Mac & Cheese

Prep Time: 10 minutes
Start To Finish: 30 minutes
Makes 6 servings

3 cups (10 oz.) of uncooked penne
1 can (18 oz.) of Creamy Three Cheese sauce
1/2 cup of milk (we used reduced fat organic milk)
1/4 tsp chopped garlic from a jar or, 1 clove finely chopped
1 1/2 cups (6 oz.) of shredded Cheddar cheese (we used mild, but you can use sharp)
1/2 cup (2 oz) of shredded American cheese (we skipped this and added extra cheddar)
1 bag (2.5 oz.) cooked real bacon bits or pieces
1/2 cup of diced red bell peppers (we left this out)

Progresso Recipe Starters

1. Heat oven to 400 degrees. Spray a 2 quart casserole with cooking spray. Cook and drain pasta as you would normally do.

2. Meanwhile, in a 3 quart saucepan, combine and heat the Three Cheese cooking sauce, milk and garlic to a boil. Remove from heat and stir in cheese until it’s melted. Stir in the pasta, bacon and pepper. Spoon into the casserole.

3. Bake uncovered for 20 minutes or until the edges are bubbly.

Optional: When you take it out, sprinkle it with some panko style bread crumbs.

    I have seen these recipe starters in the store and have contemplated buying them! Now I’ll have to do it so I can try out your recipe. I’m a vegetarian, so I would substitute “fake” bacon bits, but I bet it will be just as great. Thanks for sharing!
