Pumpkin Granola Bars

:-)   Make ahead for a great on-the-go snack.  :-)

2 1/4 cup of oats
1 tsp of cinnamon
1/2 tsp of allspice
1/4 tsp of ground cloves
1/4 tsp of salt
3/4 cup of light brown sugar
3/4 cup of pumpkin puree
1/4 cup of honey
1 tsp of vanilla extract

Preheat oven to 350. Spray a8x8 or 9×9 pan.

Combine oats, spices and salt together and set aside.

In another bowl, whisk brown sugar, pumpkin, honey and vanilla until it’s smooth.

Mix the wet and dry ingredients together until all of the oats are moist. Evenly press oat mixture in the bottom of the pan and bake for 30 – 40 minutes or until golden brown.

Let cool, then cut them using a sharp knife.
