Red Roasted Potatoes

Red Roasted Potatoes – This is a great recipe for older kids/teens who want to make a side dish on their own. Serve this with any chicken, fish or meat.  

This is a truly simple and quick side dish. It’s one of my families favorite side dishes. It started out as a recipe from a friend at her New Years Eve party. Thanks Claire!

  • Preheat the oven to 350 degrees.
  • Wash and cut potatoes into quarters. We usually use 8-9 small-medium red potatoes for four people.
  • In a large bowl, mix potatoes with some olive oil and oregano. I usually just eyeball it. You want the potatoes to be covered in oil on all sides and a decent amount of oregano.
  • Place face down on a cookie tray and bake for 15 minutes.
  • Turn the potatoes over and bake another 15-20 minutes.

    I do exactly the same thing with potatoes, but I start them in a fry pan first with lots of melted butter and coat them with an all purpose seasoning.

    Better than chips and probably just as unhealthy but we don’t have them too often.

    You would think with an Italian background I would have tried oregano on potatoes, but I never have… always have used rosemary. I will check it out. Thanks for sharing this, come back to “Foodie Friday” next week.

    Recently I started making red potatoes in a way that takes more time but is totally delicious. I cut them in quarters and then boil them until tender. Then I marinate them in oil and lemon infused with fresh garlic slices that I roast in a foil packet with olive oil and salt until the garlic pieces turn light brown around the edges. (I mash the roasted garlic before adding it to the oil and lemon.) Then I bake the potatoes after they’ve marinated for a few hours.

    The addition of the roasted garlic makes the potatoes out of this world. I never thought of adding oregano though. I’ll definitely do that next time! That will be the perfect complement to the lemon and garlic. Thanks for the idea.
