Peanut Butter Honey Balls:
This recipe is fun and extremely easy! Whenever the snack pantry was empty, I could always rely on this <a href="http://funeasyrecipesforkids.com"title="" >fun easy recipes for kids after school when I was starving for some sweet goodies. I got this recipe in a library book at the time, and have found there are tons of variations on it. I’ve also done a few variations of my own.

Ingredients needed:
One half cup of honey
(alternative sweeteners *not* recommended as the taste would vary too much)
One cup of dry milk – nonfat
One half cup of graham crackers
One half cup of peanut butter (with nuts, or without)

Cold snack preparation:
Take the assorted ingredients and stir them up in a bowl. You can use a spoon, or even a fork for this. Just make sure that everything is stirred up until it has a smooth texture. Roll them into round shapes, the size of your choosing. Then put them in the refrigerator.

Hot snack preparation:
After they have been chilling in the refrigerator for a time, take the assortment of balls and heat them at 350 degrees in the oven for no more than 5 minutes, or heat them in the microwave for no more than 1 minute. Then, enjoy!

Optinal Toppings:
You can add these in either during the stirring process or to top them.
Nuts
Assorted sprinkles
Dried <a href="http://funeasyrecipesforkids.com/600-delicious-chocolate-recipes/"title="" >chocolate milk (e.g. Nestlé’s Quick)
Sugar sprinkles
powdered sugar Raisins

Elvis Presley’s Fried Peanut Butter and Banana Sandwich
1 small ripe banana
2 slices white bread
3 tablespoons peanut butter
2 tablespoons butter
In a small bowl, mash the banana with the back of a spoon. Toast the bread lightly. Spread the peanut butter on one piece of toast and the mashed banana on the other. Fry the sandwich in melted butter until each side is golden brown. Cut diagonally and serve hot.

Grilled Eggplant Burgers
6 slices peeled eggplant, 1/2 inch thick
2 tablespoons olive oil
4 ounces goat cheese
1/4 cup sun dried tomatoes in oil
1/4 cup pine nuts
12 thin slices good quality bread, toasted
Grill, broil or sauté the slices of eggplant that have been brushed with oil until brown and soft. Place the eggplant slices on the bread and top with goat cheese, sun dried tomatoes and pine nuts. Top with remaining slices of bread and serve.

Cobb Salad Pitas
1/2 teaspoon Dijon mustard
1 tablespoon red-wine vinegar
3 tablespoons olive oil
1 small avocado (preferably California)
2 1/2 cups diced cooked chicken (about 2 whole breasts)
1/2 cup chopped seeded vine-ripened tomato
4 slices bacon, cooked until crisp and crumbled
1/2 cup crumbled Roquefort cheese (about 2 ounces)
2 cups shredded romaine
four 7-inch pita loaves, halved crosswise
1 hard-boiled large egg, forced through a coarse sieve
In a bowl whisk together mustard, vinegar, and salt and pepper to taste and add oil in a stream, whisking until emulsified. Peel, pit, and finely chop avocado and add to dressing.

Fun easy recipes for kids: Breakfast

Banana Split

1 small banana
1/2 cup crunchy nugget cereal or favorite oat or corn cereal
1/2 cup low fat vanilla, blueberry or strawberry yogurt, or cottage
cheese
1/2 teaspoon honey
1/2 cup pineapple tidbits or chunks
Maraschino cherries, optional

1. Peel and split banana lengthwise and place in banana split dish or
cereal bowl.
2. Sprinkle cereal over banana, reserving some for topping.
3. Spoon yogurt or cottage cheese on top and drizzle with honey.
4. Decorate with reserved cereal, pineapple and cherries.

This colorful, delicious breakfast is so inviting, it may become a morning “must-have!” No need to worry about the same old breakfast. There are many different combinations of yogurt, fruit or cottage cheese you can choose, and they will all be popular and nutritious.
For example, if melon is in season try cantaloupe cubes instead of pineapple. Grapes could top the cereal, or fresh or frozen berries. Different cereal toppers will create different flavors and textures. Let your children choose their favorite fixings and watch how breakfast disappears!

Breakfast Bars

6 tablespoons margarine
3 cups miniature marshmallows
1/2 cup peanut butter
1/2 cup nonfat dry milk
1/4 teaspoon cinnamon
1 cup raisins
4 cups ready-to-eat oat cereal circles

1. Spray a square pan, 9”x9”x2”-pan with cooking spray.
2. In microwave, melt margarine in a large microwave-safe bowl at high
power for 45 seconds to 1 minute, or until melted.
3. Stir in peanut butter and marshmallows.
4. Microwave on high power for 1 to 1 1/2 minutes, or until mixture is
melted. Stir until smooth.
5. Add dry milk, cinnamon, raisins and cereal; stir until evenly coated.
6. With buttered hands, pat mixture into pan.
7. Cool thoroughly and cut into squares.

Breakfast Burrito

4 eggs
1/4 cup milk
1 teaspoon margarine
1 cup refried beans
4 flour tortillas
1/2 cup grated cheese
1/4 to 1/2 cup salsa

1. In a medium bowl, mix eggs and milk with a fork.
2. Melt margarine in skillet on medium heat. Stir in egg mixture and cook until firm.
3. Heat refried beans 1 to 2 minutes in microwave or in pan on stove top.
4. Soften tortillas in microwave or skillet. On each tortilla, put 1/4 the eggs, beans, cheese and salsa. Roll tortilla to eat.
Helpful Hints: They are called Breakfast Burritos, but could also be served as a main meal. Other ingredients such as green peppers, onion or mushrooms could be added for extra flavor.

Mix and Match:
Melt whatever kind of almond bark you want (butterscotch, white <a href="http://funeasyrecipesforkids.com/600-delicious-chocolate-recipes/"title="" >chocolate, chocolate) in your microwave. Dip pretzel rods, dried fruit, etc. in it. You can even stir in rice krispies, raisins, coconut, etc. Either lay it out on waxed paper or drop by spoonfuls on waxed paper to cool.

Easy Fudge:
8 oz. semi sweet chocolate
2/3 cup sweetened condensed milk
3/4 teaspoon vanilla
1/2 cup nuts, (optional)

Grease 8 X4 or 9 X 5 loaf pan. Microwave the chocolate and sweetened condensed milk in uncovered
bowl on high for about 1 minute and stir. If the chocolate has not completely melted then microwave at additional 10 – 15 second intervals until you are able to stir it smooth. Stir in vanilla, and nuts, (if adding). If you want “rocky road” fudge, you may also add mini marshmallows at this time. Spread in a pan and refrigerate until firm. Cut into squares.

Peanut Butterscotch Krispies:

12 oz. butterscotch morsels
3 cups Corn Flakes
1/4 cup peanut butter

Melt the butterscotch morsels and peanut butter together, stirring until smooth. Add the corn flakes and mix well. Drop by tablespoons onto waxed paper.

Coconut Fudge Balls Candy Recipe

2/3 cup evaporated milk
2 1/2 cup powdered sugar
12 ounce semi sweet chocolate bits
1 cup chopped nuts
7 ounce or more coconut

Mix chocolate bits and milk and microwave until melted (about 3 minutes). Stir in sugar, and nuts. Chill 1/2 hour. Roll into balls. Roll balls in the coconut.

Marble Fudge:

1 (12 oz.) package semi-sweet chocolate
1 (12 oz.) package butterscotch
1 cup peanut butter
1 (10 1/2 ounce) package mini marshmallows
1 cup salted nuts

Combine the chocolate, butterscotch and peanut butter in large glass bowl. Microwave on medium for five minutes. Stir until melted. Fold in the marshmallows and peanuts. Spread in a buttered 13 x 9 inch pan. Refrigerate for several hours or until set. Cut into squares.

Halloween is such a great time of the year to try some <a href="http://funeasyrecipesforkids.com"title="" >fun easy recipes for kids. You’ll probably already have a lot of the following items on hand already and what you don’t, is easily found in your local supermarket. Most of these recipes are easy enough so that your children can make them on their own, but some may require your assistance or supervision.

Bloody Good Popcorn

One package of microwave pop corn
paprika

Prepare the popcorn according to the package directions. Pour it into a large mixing bowl, shake some paprika on it and stir it until it turns red.

Ghoulish Punch

1/2 gallon limeade
1 liter ginger ale
1/2 gallon lime sherbet
marshmellows
maraschino cherries

Mix the limeade and ginger ale together. Scoop the sherbert and add it into the mixture. Add the marshmallows and maraschino cherries to float in punch.

Creepy Spiders

Two round crackers
Smooth peanut butter
Eight small pretzel sticks
Two raisins

Spread the peanut butter on one cracker and cover with the other cracker to make a <a href="http://funeasyrecipesforkids.com/379-sandwich-ideas/"title="" >sandwich. Insert eight pretzel “legs” into the side of the cracker in the peanut butter. Use a dab of peanut butter to set two raisin “eyes” on top.

Ants on a log

celery sticks
peanut butter
raisins

Wash the celery sticks and cut each piece in half. Spread peanut butter over the entire length of the celery. Press raisins into peanut butter.

Scary Spiders

Twelve ounce package of <a href="http://funeasyrecipesforkids.com/600-delicious-chocolate-recipes/"title="" >chocolate chips
One medium size can of chow mein noodles
One package of M&M’s

Melt the chocolate in the microwave. Stir in the chow mein noodles. Drop by spoonfuls onto waxed paper. Add two M&M’s for spider eyes.

These easy recipes are perfect for a Halloween party with friends, a class party at your child’s school or as a fun treat for you and your kids to make, and enjoy at home.

Happy Halloween!!
